How to Store Ghee: Jars, Spoons, Shelf Life and Why It Turns Grainy
By Thaaro Foods · 8 October 2026
Ghee keeps for months without a fridge, if you keep water and dirty spoons away from it. Here is how to store it, and what its changing texture means.
One of the reasons ghee has been part of Indian kitchens for so long is that it keeps. Cooked until all the water is gone, it does not need a fridge. A few habits keep it tasting fresh to the last spoon.
The three rules
- Always use a clean, dry spoon. A drop of water or a crumb of food is what spoils ghee. Never dip a wet spoon or the spoon you are cooking with.
- Keep the lid closed. Close the jar straight after use, so moisture and kitchen smells stay out.
- Keep it cool, dry and out of the sun. A cupboard away from the stove is ideal. Heat and sunlight age ghee faster.
Does ghee need to go in the fridge?
No. Ghee keeps at room temperature until the best-before date on its label. Thaaro's jars carry the date and batch number on the label. A fridge does no harm, but the ghee sets hard; take out what you need a little before cooking.
The right container
- Glass or steel with a tight lid is best. Thaaro packs its ghee in glass jars.
- Buying a big tin? Fill a small jar for daily use and keep the tin closed in the cupboard. Opening the big tin less often keeps it fresh longer.
- Avoid keeping ghee in an open katori by the stove, where steam and splashes get in.
Why ghee turns grainy, solid or runny
Ghee changes with the weather, and that is normal.
- Grainy (danedar): slowly cooled bilona ghee forms grains. Many people look for this texture.
- Solid in winter, liquid in summer: ghee melts somewhere around body temperature, so a warm kitchen softens it and a cold one sets it.
- Two layers: a clear liquid top over a grainy base is just the ghee setting unevenly. Stir it, or warm the jar gently in a bowl of warm water.
How to tell if ghee has gone off
Fresh ghee smells nutty and sweet. Throw it away if it smells sour, sharp or like old paint, tastes bitter, or shows mould (usually where water got in). When in doubt, do not use it.
Quick answers
How long does ghee last once opened?
Until its best-before date, if you follow the three rules above.
Can I reuse ghee after frying?
Strain it once it cools and keep it in a separate jar for frying only. Do not mix it back into fresh ghee.
My ghee arrived melted. Is it spoiled?
No. Ghee often melts in transit in warm months and sets again at home. Leave the closed jar to rest in a cool place.
