How to Identify Pure Ghee at Home: 6 Simple Tests That Never Lie

August 5, 2026

With adulterated ghee rampant in the market, knowing how to test purity at home can protect your family's health. These six tests require nothing more than your kitchen.

Why Ghee Adulteration Is a Serious Problem

The FSSAI has repeatedly flagged ghee as one of India's most adulterated food products — adulteration rates of 30–40% in random market sampling. Common adulterants include vegetable oils, vanaspati (hydrogenated fats), starch, animal fats, and mineral oils. These are actively harmful: vanaspati consumption is linked to heart disease, cancer, and metabolic disorders.

Test 1: Iodine Starch Test

Melt 1 tsp ghee in a glass. Add 2–3 drops of iodine tincture. Blue or black colour = starch added. Pure ghee: no colour change.

Test 2: The Palm Test

Place a small amount in your palm. Pure ghee melts immediately at body temperature (37°C). Adulterated ghee may feel stickier and leave a visible white residue.

Test 3: Transparent Glass Test

Melt ghee and pour into a transparent glass. Hold to light. Pure ghee is clear and golden when fully melted. Cloudiness or white suspended particles indicate impurities.

Test 4: The Fridge Crystal Test

Authentic Bilona A2 ghee develops a grainy or crystalline texture when refrigerated — from natural fat crystals in diverse fatty acids. Processed or adulterated ghee solidifies uniformly smooth because the natural crystal structure has been destroyed.

Test 5: Vanaspati Detection (Baudouin Test)

Mix melted ghee with equal hydrochloric acid and a few drops of sugar solution. Crimson or pink acid layer = vanaspati present. Pure ghee: no colour change.

Test 6: The Aroma Test

Pure A2 Bilona ghee has a rich, nutty, slightly sweet fragrance that deepens when gently warmed. Adulterated or low-quality ghee smells flat, waxy, or faintly chemical when heated.

What Thaaro Guarantees

Our ghee passes all six tests. We additionally publish NABL-accredited lab reports with full purity parameters — Reichert value, Polenske value, heavy metals, pesticide residues — publicly available for independent verification.
