Danedar Ghee: Why Good Ghee Turns Grainy

By Thaaro Foods · 8 October 2026

Grainy, danedar ghee is the texture many families look for. Here is how the grains form, and what a grainy or smooth jar tells you.

Open a jar of bilona ghee on a cool morning and you will often see it set into small grains, like fine semolina in gold. In many homes this danedar (grainy) texture is the sign of ghee made the slow way.

How the grains form

Ghee is made of different fats that turn solid at different temperatures. When hot ghee cools slowly, the fats with a higher melting point set first and grow into small crystals, while the rest stays liquid around them. That is the grain.

When ghee cools fast, or is stirred or chilled as it sets, the crystals stay tiny and the ghee turns smooth and creamy instead.

What decides the texture

  • How it cools: slow cooling gives bigger grains.
  • The milk: buffalo ghee sets thicker and often grainier than cow ghee.
  • The weather: in summer ghee may melt and lose its grains; in winter it sets firm.
  • How it is made: ghee cooked slowly from bilona butter is known for its grain.

Is grainy ghee better?

Grain is about how the ghee cooled, and many families prefer it. A smooth jar is not a bad jar. Judge ghee by its aroma, taste, the maker and the label, not by texture alone.

Getting the texture back

If your ghee has melted and set smooth, warm the closed jar gently in a bowl of warm water until it is liquid, then leave it to cool slowly at room temperature, away from the fridge. The grains form again over a day or two.
