A Food Lover’s Guide to Alwar: Kalakand, Dal Baati and Village Flavours

By Thaaro Foods · 8 October 2026

Alwar is famous for its milk cake, and its villages for simple food cooked in ghee. A food lover’s guide to the town we call home.

Alwar sits at the foot of the Aravalli hills in north-east Rajasthan, about 150 km from Jaipur and 160 km from Delhi. Thaaro is made in Nijamnagar, a village near the town. Here is what we would tell a friend to eat.

Alwar ka kalakand (milk cake)

Alwar's best-known sweet is its kalakand, also sold as milk cake: milk cooked slowly for hours until it caramelises into a dense, grainy cake, golden-brown at the centre and pale at the edges. Every sweet shop in town sells it, and families carry boxes home as gifts.

Dal baati churma

The meal of Rajasthan: baked wheat baati dipped in ghee, panchmel dal and sweet churma. In the villages baati is still baked in the embers of cow dung cakes. Make it at home with our dal baati churma recipe.

Kachori and kadhi

Mornings in town start with hot kachori: pyaaz kachori or dal kachori, often with kadhi or aloo sabzi, and sweet tea.

Village food through the year

  • Winter: bajra roti with ghee and gur, sarson ka saag, and lehsun chutney.
  • Summer: chaas (buttermilk) left over from churning, raabdi (a cooling millet-and-buttermilk drink), and fresh mango pickle.
  • All year: kadhi, ker sangri, and ghee on everything.

If you visit

Alwar's Bala Quila fort, Siliserh lake and the nearby Sariska tiger reserve draw visitors from Delhi and Jaipur. Pick up kalakand on the way home.
